1 kg potato gnocchi
3 tbsp butter
4 garlic cloves, minced
3/4 cup tomato paste, about 156 mL
1 1/2 cups water
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper
1 cup chopped fresh basil
1/3 cup grated parmesan
Cook gnocchi following package directions. Melt butter in a large frying pan over medium heat. Add garlic and stir until fragrant, 1 min. Stir in tomato paste, water, oregano, salt and pepper. Reduce heat and simmer to develop flavour, stirring often, 5 to 7 min.
Drain gnocchi and add to sauce in pan. Stir to coat, then stir in basil and cheese. Spoon into bowls.
