One pot pasta, Photo, Sian Richards.
Yes, it all cooks in one pot, and it's sooo good.
4 cups water
450 g linguine pasta
796-mL can diced tomatoes
1 onion, thinly sliced
1 cup basil leaves, divided
4 garlic cloves, minced
1/4 cup butter
3 tbsp tomato paste
1/2 tsp hot-red-chili-flakes
1/4 tsp salt
1 cup grated parmesan
COMBINE water with linguine, diced tomatoes, onion, 1/2 cup basil, garlic, butter, tomato paste, chili flakes and salt in a very large frying pan. Boil over medium-high, stirring often until pasta has absorbed most of the liquid, 9 to 10 min.
TRANSFER pasta to a platter. Sprinkle with parmesan and remaining basil. Serve immediately.
