Brigadeiros (brazilian dessert). Photo, Erik Putz and Sian Richards.
Part dulce de leche, part chocolate and entirely addictive, these little sweets are a reinvented truffle.
300-mL can sweetened condensed milk
3 tbsp unsweetened cocoa powder, preferably Fry's
1 tbsp butter
chocolate or coloured sprinkles
candy paper cups
STIR condensed milk with cocoa and butter in a medium heavy saucepan over medium-low until mixture thickens, about 20 min. Stir constantly so mixture doesn't stick to bottom of pan. Scrape into a shallow pie plate. Refrigerate until firm, about 30 min.
POUR sprinkles into a bowl. Scoop out 1 tbsp portions of milk mixture and roll into a ball. Roll balls in sprinkles until coated and place them in paper cups. Serve immediately or freeze. If frozen, let sit at room temperature for 2 hours before serving.
While the rest of the world obsesses over soccer, we’re wild about another round object from Brazil: brigadeiros. Part dulce de leche, part chocolate and entirely addictive, these little sweets are a reinvented truffle. Our friends at the Sweet Brigade shared their traditional recipe with us, so cook some up (or just order some from them).
Prep tip: Wet fingers make it easier to roll milk mixture into balls.
