It's summer, you've worked hard and you deserve a drink. Kick back with our tequila watermelon cocktail, and enjoy the lazy-hazy days of the season.
8 cups cubed seedless watermelon
3/4 cup lime juice
3/4 cup agave syrup
1 cup tequila
sparkling water
cucumber, cut into ribbons
1 lemon, cut into 6 wedges
WHIRL watermelon, lime juice and agave syrup in a blender until smooth. Pour through a fine sieve into a large bowl, discarding any foam. Pour through sieve again into a pitcher, discarding foam. Refrigerate until chilled, about 4 hr.
TO serve, add tequila to watermelon mixture and divide among 6 glasses. Top each with a splash of sparkling water and garnish with a cucumber ribbon and a lemon wedge.
