2/3 cup red-wine vinegar
2 1/2 tsp granulated sugar
1/4 tsp salt
2 medium beets
SHAKE red-wine vinegar with sugar and salt in a 500-mL jar until sugar dissolves.
ADD beets, peeled and very thinly sliced (use a vegetable peeler or mandoline).
REFRIGERATE 1 week before serving.
