Piles of pastrami make this matzah pizza an indulgent lunch or dinner.
1 sliced sweet onion
3 tbsp canola oil
2 tbsp mayonnaise
2 tsp grainy mustard
1 matzah
pastrami deli meat
halved cornichons
cracked pepper
COOK onion in oil in a frying pan over medium until softened and caramelized, 15 min, lowering heat as needed. Stir mayo and mustard, then spread on matzah. Top with onions, pastrami slices and cornichons. Sprinkle with pepper.
