Roasted Sweet Potatoes and Pears

Roasted sweet potatoes' virtue in the kitchen, aside from their antioxidant bonus, is their earthy sweetness. Heighten this with succulent, fragrant pears.

Ingredients

  • 1.5 kg sweet potato, about 3 large potatoes

  • 2 to 3 tbsp olive oil

  • 3 tbsp balsamic vinegar

  • 1 tsp salt

  • 1/2 tsp ground nutmeg

  • 1/2 tsp freshly ground black pepper

  • 4 ripe, firm pears

  • chopped fresh mint or basil

Instructions

  • Preheat oven to 400F (200C). Line a large, rimmed baking sheet with foil. Peel potatoes and cut into large bite-size chunks. Place on foil. Drizzle with oil and vinegar. Stir until evenly coated. Sprinkle with seasonings and stir to distribute. Roast, stirring halfway through, until potatoes are nearly tender, 40 to 45 min.

  • Cut unpeeled pears in half and core. Slice each half into 4 wedges. Stir with nearly tender potatoes and continue roasting, stirring once, until pears are fork-tender, 10 to 15 more min. Stir in mint just before serving. Roasted sweet potatoes and pears are perfect with our Spicy Maple Rack of Pork or roast chicken.
