Italian grilled sandwich

Ingredients

  • 4 Italian sausages

  • 2 red bell peppers

  • 1 large tomato

  • 1 onion

  • 1 tbsp olive oil

  • Generous pinch salt

  • Generous pinch pepper

  • 4 hot dog or focaccia buns

  • 1 cup grated cheddar or Asiago or crumbled Stilton or goat cheese, optional

Instructions

  • Lightly oil grill and heat barbecue to medium-high. Pierce sausages in several places with a fork. Place on grill. Barbecue with lid closed, turning occasionally, until lightly browned and cooked through, 10 to 12 minutes.

  • Meanwhile, seed peppers. Slice into quarters. Slice tomato and onion into thick rings. Brush all with oil and sprinkle with salt and pepper. Add peppers and onion to barbecue for last 6 to 8 minutes of sausage grilling. Turn often until peppers are lightly charred and grill marks form on onion. Add tomato for last 2 minutes of grilling. Remove to a cutting board as they are done. Slice peppers into strips. Coarsely chop onion and tomato. Tuck sausages into buns. Top with veggies and cheese.
