Summer berry & avocado salad

Ingredients

  • 2 tbsp freshly squeezed lime or lemon juice

  • 1 tsp honey

  • 1 tsp ground cumin

  • 1/4 cup olive oil

  • 2 peaches

  • 2 ripe avocados

  • 180 g mesclun greens, or baby spinach, about 12 cups

  • 1/2 pint blueberries, or raspberries

Instructions

  • In a small bowl, whisk lime juice with honey and cumin. Slowly whisk in oil until evenly mixed. Use right away or leave at room temperature several hours.

  • Just before serving, peel peaches, if you wish. Peel avocados and remove pits. Slice both into wedges and place in a large bowl with greens. Drizzle with dressing and toss to evenly mix. Arrange on plates and sprinkle with blueberries.

The unusual mix of blueberries, peaches and avocados adds wow to this salad, and it's also rich in fibre.
