Iced fruit bowl

Ingredients

  • 1 bunch red grapes

  • 1 bunch green grapes

  • Assortment of small fruit, such as pears, kumquats, red and yellow plums, tangerines, lychees and figs

Instructions

  • Wash fruit well. Cut red and green grapes into small bunches. Do not cut remaining fruit or it will discolour. Fill a large, decorative glass bowl or tall wide vase half full with cold water and a few ice cubes. Slide fruit into water, alternating different types. Top bowl up with water to within 1 inch (2.5 cm) of rim. Fruit bowl can be assembled up to 2 hours in advance, but keep refrigerated.

There's nothing more refreshing on a scorching-hot day than chilled fresh fruit. Choose firm fruit that will hold up well to a dunk in ice water. Avoid using fruit with a high water content as it may become mushy.
