Fruit with lime yogurt cream

Fruit with lime yogurt cream

Ingredients

  • 3 cups plain yogurt

  • 2 tbsp granulated sugar

  • 1 tbsp freshly squeezed lime juice

  • 1 tsp finely grated lime zest

  • 1/4 tsp vanilla

  • 6 cups mixed berries and sliced peaches

Instructions

  • To thicken yogurt, line a sieve with cheesecloth or a new reusable kitchen cloth. Place over a bowl and pour in yogurt. Cover and leave at room temperature for at least 2 hours or refrigerate overnight. Discard liquid in bowl. Stir thickened yogurt with sugar, lime juice, peel and vanilla. Taste, then stir in more juice or sugar, if needed. Serve fruit in bowls topped with a generous dollop of yogurt cream. Leftover sauce will keep well, covered and refrigerated, for up to 1 week.
