Three-ingredient curry barbecue

Ingredients

  • 1/2 cup barbecue sauce

  • 2 tbsp Indian curry paste

  • 8 skinless, bone-in chicken thighs, or drumettes

Instructions

  • Lightly oil grill and heat barbecue to medium. In a small bowl, stir barbecue sauce with curry paste. Remove skin from chicken, if necessary. When barbecue is hot, lightly brush chicken with sauce and place on grill. Save remaining sauce for brushing when grilling.

  • Grill with lid closed, turning once and brushing often with sauce, 10 minutes. Discard any sauce. Continue grilling, turning occasionally, until chicken is springy when pressed, 10 to 12 more minutes. If chicken starts to burn, move to a cooler area of grill. Great with Sassy Warm Potato Salad (also in the Recipe File) and sliced tomatoes.
