Rub-a-dub chicken and garlicky spread

Ingredients

  • finely grated lemon zest, of 1 lemon

  • 1 tsp curry powder

  • 1/2 tsp ground cumin

  • 1/4 tsp salt

  • 4 skinless, boneless chicken breasts

  • 2 tbsp garlic spread, see below

GARLICKY SPREAD

  • 1/2 cup butter

  • 1/2 cup olive oil

  • 2 to 4 garlic cloves, minced

  • 2 tbsp finely chopped parsley

Instructions

  • Preheat barbecue. Mix lemon peel with curry, cumin and salt. Rub all over chicken.

  • Lightly brush one side of chicken with Garlicky Spread and place coated-side down on barbecue. Grill for 8 minutes. Brush top with Garlicky Spread and turn. Brush again. Grill for 6 to 8 more minutes.

  • For Garlicky Spread: Stir butter with olive or other vegetable oil, minced garlic cloves and parsley until blended. The oil keeps the spread soft enough to brush on meat, vegetables or bread without melting. Even when refrigerated, it can be spread easily on bread and keeps well, covered, for at least a week. It also freezes well.
