Grilled chicken with caponata

Ingredients

  • 6 skinless, boneless chicken breasts

  • 1 1/2 tsp olive oil

  • 1 tsp freshly ground black pepper

  • 1/2 tsp salt

  • 1/2 tsp dried oregano leaves

  • 130-g log creamy goat cheese

  • 2 cups Autumn caponata sauce, recipe link below

Instructions

  • Oil grill and preheat barbecue to medium-high. Brush both sides of chicken breasts with olive oil. In a small bowl, stir pepper with salt and oregano. Sprinkle mixture on both sides of meat. Grill chicken with lid closed until it feels springy when pressed, from 6 to 8 minutes per side. Remove to plates.

  • Spoon about 1 heaping tablespoon (22 mL) goat cheese over each chicken breast. Then top each breast with about 1/3 cup (75 mL) Autumn Caponata Sauce. Serve additional sauce on the side, if you like.
