Grilled Buffalo chicken legs

Ingredients

  • 2 tbsp olive oil

  • 2 tbsp Tabasco sauce

  • 2 tsp cider or red-wine vinegar

  • 1 tsp dried basil leaves

  • 1 tsp dried thyme leaves

  • 1 tsp dried oregano leaves

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 4 chicken legs, with thighs attached

  • blue cheese salad dressing, optional

Instructions

  • Lightly oil grill and heat barbecue to medium. In a large bowl, stir oil with Tabasco, vinegar, basil, thyme, oregano, paprika and salt. Discard chicken skin. Add legs to bowl. Turn to evenly coat, then place on grill.

  • Grill chicken with lid closed. Turn and brush with more marinade after 10 minutes. Discard marinade. Continue grilling, turning often, until chicken is springy when pressed, 20 to 25 more minutes. Serve with salad dressing for dunking.

Buffalo-style wings make a great snack, but at dinner we're hungry for more meat! Flavourful, inexpensive chicken legs are the answer.

Grilling tip

To cut down on grilling time, simply cut chicken legs at the joint into 2 pieces before coating with sauce.
