Fiery barbecued steak

Ingredients

  • 3 tbsp olive oil

  • 3 tbsp Tabasco sauce, preferably chipotle-flavoured

  • 1 tsp garlic powder

  • 1 tsp mustard powder

  • 1/2 tsp salt

  • 1/2 tsp ground black pepper

  • 4 strip loin steaks, about 250-g each and preferably 3/4- to 1-in. thick

Instructions

  • Lightly oil grill and heat barbecue to medium-high. In a large bowl, stir oil with Tabasco, garlic and mustard powders, salt and pepper. Add steaks and turn to evenly coat.

  • Place steaks on grill. Barbecue, uncovered, 3 to 6 minutes per side for medium-rare, depending on thickness. Delicious with our Santa Fe Salad Platter.

Check the package when you're shopping for steak. Most supermarkets label it by cooking method - grilling, simmering, fast-fry or marinating. Any grilling steak works well here, but our favourites are strip loin, rib-eye and T-bone.

Cooking Indoors?

Preheat oven broiler. Place steaks on a broiler pan about 4 inches (10 cm) from element. Broil 4 to 6 minutes per side for medium-rare.
