Cumin-chili-rubbed eye of round

Ingredients

  • 1 tsp ground cumin

  • 1/2 tsp chili powder

  • 1/4 tsp cayenne pepper

  • 1/4 tsp garlic powder

  • 4 eye of round steaks, about 1-in. thick

Instructions

  • Oil grill or broiling pan. Preheat barbecue or broiler. Blend seasonings in a small bowl. Sprinkle both sides of meat with seasonings, then gently press them into meat. Steaks can be cooked right away, left at room temperature for an hour or covered and refrigerated for 1 day.

  • When ready to cook, place meat on grill over medium-high heat or in broiling pan about 4 inches (10 cm) from broiler. Barbecue with lid down or broil 4 minutes per side for medium-rare. Steaks are great served with baked potatoes and a Caesar salad.
