Grilled pizza burgers

Ingredients

  • 2 tomatoes, or 4 plum tomatoes

  • 1 yellow or green bell pepper

  • 1/2 small red onion

  • 4 frozen store-bought or homemade burgers

  • 1 tsp Italian seasoning, or a mix of dried basil and oregano leaves

  • salt

  • freshly ground black pepper

  • 1/2 cup grated mozzarella

Instructions

  • Lightly oil grill and heat barbecue to medium. Slice tomatoes in half, then squeeze out seeds and juice and discard. Core and seed pepper. Cut into quarters. Cut onion into thick rounds. Lightly brush tomatoes, yellow pepper and onion with oil. Place on grill. Generously sprinkle both sides of burgers with seasoning.

  • Place burgers on grill. Barbecue with lid closed until veggies are lightly charred on both sides. Tomatoes will need about 3 minutes per side, pepper and onion 6 to 8 minutes per side. Remove to a cutting board as they are done. Grill burgers according to package directions or until juices run clear and meat is firm when pressed, 6 to 8 minutes per side.

  • As soon as burgers are removed from grill, sprinkle with cheese. Then coarsely chop tomatoes, pepper and onion. Place in a medium-sized bowl. Sprinkle with another generous pinch of Italian seasoning, salt and pepper. Stir to evenly mix. Spoon over cheese-topped burgers. Burgers are great on a grilled square of focaccia.
