Devilled beet sandwich

Ingredients

  • 4 hard-boiled eggs, chopped

  • 3 tbsp mayonnaise

  • 2 tsp white-wine vinegar

  • 1/4 tsp salt

  • fresh pepper

  • 1 large beet, roasted

  • toasted bread

  • dill

Instructions

  • STIR hard-boiled eggs with mayo, white-wine vinegar and salt. Season generously with fresh pepper.

  • STIR in roasted beet, peeled and finely chopped.

  • SPREAD on toasted bread. Sprinkle with dill.
