Lighter than juice and way more interesting than sparkling water, agua frescas are next-level refreshers. Here’s a watermelon-grapefruit take on the drink.
1 large pineapple
320-g can sweetened condensed coconut milk (preferably Nature’s Charm)
6 cups water
1/2 cup freshly squeezed lime juice
1/4 tsp salt
Peel, core and cube pineapple.
Combine pineapple with coconut milk, water, lime juice and salt in a high-powered blender. Strain into a pitcher filled with ice. Stir to combine.
