To gild brownies, turn them into a s'mores brownie and bring one of summer’s favourite tastes into a cold winter’s day.
2 tbsp warm water
7-g pkg unflavoured gelatin powder
1/3 cup granulated sugar
3 tbsp corn syrup
3 tbsp cold water
1/2 tsp vanilla
chocolate sauce
graham-cracker cereal
POUR warm water into the bowl of a stand mixer with whisk attachment. Sprinkle in gelatin powder. Let stand 2 min.
STIR granulated sugar with corn syrup and cold water in a small saucepan. Boil, without stirring, 1 min. Stir in vanilla. Set mixer on high, then pour hot syrup in a stream down the side of the mixer bowl, beating until thick and sticky, about 4 min. Pour over cooled brownies. Drizzle with chocolate sauce and sprinkle with graham-cracker cereal.
