S'mores Brownie Topping

Chatelaine Triple Tested

To gild brownies, turn them into a s'mores brownie and bring one of summer’s favourite tastes into a cold winter’s day.

Ingredients

  • 2 tbsp warm water

  • 7-g pkg unflavoured gelatin powder

  • 1/3 cup granulated sugar

  • 3 tbsp corn syrup

  • 3 tbsp cold water

  • 1/2 tsp vanilla

  • chocolate sauce

  • graham-cracker cereal

Instructions

  • POUR warm water into the bowl of a stand mixer with whisk attachment. Sprinkle in gelatin powder. Let stand 2 min.

  • STIR granulated sugar with corn syrup and cold water in a small saucepan. Boil, without stirring, 1 min. Stir in vanilla. Set mixer on high, then pour hot syrup in a stream down the side of the mixer bowl, beating until thick and sticky, about 4 min. Pour over cooled brownies. Drizzle with chocolate sauce and sprinkle with graham-cracker cereal.
