All-Shortening Pie Dough Pastry

Chatelaine Triple Tested

The all-shortening crust is supremely flaky but subdued in flavour, which lets the filling shine.

Ingredients

  • 1 1/4 cups all-purpose flour

  • 1 tsp granulated sugar

  • 1/2 tsp salt

  • 1/2 cup cold shortening

  • 5 to 6 tbsp ice-cold water

Instructions

  • STIR flour with sugar and salt in a large bowl until combined. Add shortening. Using your fingertips, work mixture until finely crumbled. Stir in ice water just until pastry can easily be formed into a ball. Add more ice water, 1 tbsp at a time, if needed. Dough should not be sticky. Form into a disc. Wrap with plastic and chill in refrigerator for 30 min.
