Brandy shrub cocktail recipe
2 tbsp pickled yellow beet juice
2 tbsp apple brandy
1 tbsp simple syrup*, see below
1/2 tsp grated ginger juice
soda water
yellow pickled beets, for garnish
STIR Pickled yellow beets juice with brandy, simple syrup. and ginger juice. Top with ice cubes and club soda. Garnish with skewered Pickled Yellow Beets. Serve immediately.

*For simple syrup, bring equal parts sugar and water to a boil. Cool before using.
