How to cook a simple roast chicken perfectly

An easy recipe that only takes minutes to prep – but with incredible results

Roast chicken is the simplest dinner for family or guests. Start with a chicken no bigger than 3 1/2 lb. Brush it with olive oil and season well with salt and pepper. Roast in a shallow casserole dish (or even just on a baking sheet) at 350F for 1 hour and 15 min or so. Let rest 15 min. Bring the cookware right to the table and serve with roasted vegetables or a big salad.

Flavour variations: Chicken goes with everything! Stuff the cavity with a cut lemon or a bunch of fresh thyme, tarragon or sage. Or sprinkle skin with smoked paprika or even curry powder.
