Red onion

Here's what we suggest you do with leftover red onion

Onion confit Simmer 2 cups thinly sliced onion with 2 tbsp each water, white balsamic vinegar, sugar and honey for 45 min. Add to cheese-and-cracker platter.

Burger topper Bring 1/2 cup cider vinegar, 2 tbsp sugar and 1/8 tsp ground cumin and salt to a boil. Pour over thinly sliced onion. Leave to marinate for at least 1 hour. Drain and serve on your favourite burger.
