Simple salsa verde Stir 1 cup finely chopped arugula with 1 tbsp each lemon zest and juice, 1 minced garlic clove and 1/8 tsp salt. Spoon over grilled rainbow trout.
Arugula & potato salad Whisk 1/4 cup canola oil with 2 tbsp white-wine vinegar, 1 finely chopped shallot, 1 tsp grainy mustard, 1/2 tsp honey and 1/4 tsp salt. Season with with fresh pepper. Add 900 g cooked baby potatoes, halved, and 2 cups packed arugula. Toss to coat.
