Savoury baked feta

Place a 200-g block of feta on a parchment-lined baking sheet. Drizzle with olive oil, and sprinkle with sprigs of thyme and pepper. Bake at 350F for 20 min, then broil for 5 more min. Serve with crackers or crostini.

Greek cheese toasts

Arrange 1/2-in. slices of baguette on a baking sheet. Top each with crumbled feta. Sprinkle with oregano and pepper. Drizzle with olive oil. Broil on low until golden, about 4 min.

Delicious dip Blend 8 large basil leaves with 3 sun-dried tomatoes, 1 cup crumbled feta, 4 artichoke hearts, 1/4 cup Greek yogourt, 1 tbsp olive oil and 1/4 cup water in a blender until smooth.

Salty-sweet salad Combine 1 cup crumbled feta with 3 cups diced watermelon and 1/4 cup chopped fresh mint. Drizzle with 2 tsp balsamic vinegar and 2 tbsp olive oil. Toss to coat.
