Chatelaine's associate food editor, Lyn Chua, just returned from a glorious four-day vacation in New York City. As we all know, one of the most difficult things about coming home from vacation is getting back into a routine, don't you think? This is particularly evident with mealtime - you need to ease back into the cycle of grocery shopping/cooking and it's nice to have go-to ideas that will give you tried and true results without expending much time or energy.
So, what is Lyn going to make for dinner tonight? Our Pork and Pepper Stroganoff recipe! To the less kitchen-inclined this might sound fancy and complicated but Lyn promises that it's super easy and fast (and delicious). And it has to be in her house as her kids are constantly on the go (basketball, volleyball, weight lifting, etc.). Lyn loves this recipe because her sons like saucy dishes (could be a man thing), the pork tenderloin never toughens when overcooked, and because it's versatile, you can serve it with your choice of rice, mashed potatoes or egg noodles.
