3-ingredient ice cream scones

I scream, you scream, we all scream for ... scones?

Yes, with just ice cream, baking powder and flour, you can bake the easiest scones, ever.

We came across this ice cream bread idea and put it to the test in the kitchen. Our verdict? Not bad! While slightly dry, it both looked and felt like bread. The caveat: it's a bit too sweet to sub in for your everyday loaf.

In fact, it actually tastes a lot like scones. So we adapted the recipe to fit. To add moisture we threw in fresh blueberries, but you can add any fresh fruit you have around the house (or omit and serve with fresh cream and jam). Keep in mind that these won't be like the flakey, buttery scones you're used to — instead they'll have a cake-like chew, similar to a slice of fresh banana bread. It's definitely a fun baking project to test out at home.

Ice Cream Scones

Prep 5 min Total 30 min

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 cups vanilla ice cream, melted
  • 1/2 cup fresh berries (optional)

  • PREHEAT oven to 350F. Line a baking sheet with parchment.
  • STIR flour with baking powder in a large bowl. Using an electric mixer on medium, beat in ice cream until combined. Stir in berries, if using. (We used blueberries). Scoop 8 scones onto baking sheet.
  • BAKE in centre of oven for 15 min. Then, broil until tops are golden, about 5 min. Transfer to a rack to cool slightly. Serve with butter and jam.

Makes 8 scones.

TIP: We used vanilla ice cream, but you can try using any flavour.
