The salad that brought me back to life

I went away for a few days and came back on Monday night, jet-lagged and hungry. My friends Leanne and Jeff came over to catch up and — lucky for me — make dinner. Leanne stuck a couple of pre-made pasta dishes in the oven (you can’t beat frozen food for a fast meal). While they baked, she made a lovely salad (see below). It was exactly what I needed to feel human again. Plus, it was quick to put together so we had lots of time to chat. For some reason, I think two foods — sandwiches and salads — always taste better when someone else makes them. Salad is Leanne’s signature dish and she makes a mean one, this version had baby greens, kalamata olives, cheddar, avocado, tomatoes and lots of fresh dill. These were all tossed with homemade balsamic vinaigrette. It was delightful. What are your favourite salad fixings?
