Tomato salad with balsamic reduction
Some days, I'm just too lazy to make dressing. Here's my cheater balsamic dressing: Pour some balsamic vinegar into a small saucepan. Sprinkle with a bit of sugar. Set pan over medium heat. Simmer, stirring the vinegar or swirling the pan occasionally until balsamic is reduced by half (if not more). Let cool before drizzling over salad. It's tangy. If you don't like tart flavour, be sure to add the sugar or even a big spoonful of honey. For this salad I used red leaf lettuce, torn prosciutto and some colourful tomatoes.
