Salmon and cream cheese appetizer
A simple appetizer can save a party. Have one up your sleeve (not literally ha ha) in case people are hungry when they arrive or dinner gets delayed. Here’s a platter my friend Sue put together at a recent get together. It’s easy and elegant. She simply arranged baguette slices and gravlax (raw cured salmon). I’m not a big fan of smoked salmon but love the mellow flavour of gravlax. Next she added fresh cream cheese. Then topped with capers, thinly sliced red onion and fresh dill sprigs. I love that all the garnishes were essential – A pet peeve of mine is useless ones. (Don’t get me started on parsley.) We devoured this spread and were more than satisfied until dinnertime.
