Getting back into the daily grind after the holidays can be tricky. One week off with plenty of time to cook and bake has spoiled me, and the frozen turkey dinners in my freezer have long disappeared. So what’s a girl to eat when she gets home from work starving? Ideally, something quick and tasty. 

That’s why when we develop our Fast Food recipes, we try to make them with easy-to-follow directions coupled with minimal ingredients and maximum flavour. My current favourite is something we developed last Fall, currently in our February issue. This Red Curry Peanut Noodle recipe is so delicious, and the main reason I now have natural peanut butter on hand in my fridge at all times. We tested this recipe with regular smooth peanut butter as well, but it works best with natural peanut butter because it gives you a true peanut flavour.  This dish also works great with firm tofu instead of chicken, if you prefer a vegetarian version. And it’s perfect for when you have a Thai food craving and you’re too hungry to wait for delivery!
