Cashews, salted and roasted

Here's what we suggest you do with leftover salted and roasted cashews

Crunchy caramel bites
Melt 1 cup caramels with 2 tbsp 35% cream. Stir in 1 1/4 cups cashews. Drop 1-tbsp-sized balls on baking sheet. Chill, dip in melted chocolate and let cool.

Healthy pasta salad
Purée 1 1/2 cups arugula, 1/4 cup each cashews and grated parmesan, 3 tbsp olive oil, 2 tsp lemon juice and 1 clove garlic until smooth. Toss with cooked pasta and grilled vegetables.
