6 large celery stalks
250-g container spreadable cream cheese, at room temperature
1 cup crumbled Stilton, or blue cheese
1/3 cup coarsely chopped dried cranberries
2 green onions
Slice celery stalks into 2-inch- (5-cm-) long pieces. Slice each piece in half lengthwise.
In a large bowl, stir cream cheese with Stilton and mash larger chunks of cheese against side of bowl. Stir in cranberries and onions.
Fill each celery stick with a heaping tsp (7 mL) cheese mixture. Arrange celery sticks on a serving tray. Serve immediately or refrigerate, covered, up to 3 hours.

Mound cheese mixture in a small serving bowl that will hold at least 2 cups (500 mL). Set in centre of a large platter and pile celery sticks and other fresh veggies around it to use as dippers. Filling can be prepared, covered and refrigerated up to 4 days before serving. Just bring to room temperature before filling celery or using as a dip.
