1 tsp dried oregano
1 tsp paprika
1/4 tsp cayenne pepper
1 small red bell pepper, chopped
1 green onion, thickly sliced
1 cup chopped ham
1 cup frozen hash browns
1/2 cup grated manchengo or cheddar
Preheat oven to 350F (180C). Lightly coat an 8-in. (2-L) baking dish with vegetable oil. In a large bowl, whisk eggs with seasonings. Stir in pepper, onion, ham, frozen hash browns and cheese. Turn into baking dish and stir to evenly distribute ingredients. It will look chunky.
Bake, uncovered, in centre of oven until centre is set when dish is jiggled, 30 to 40 min. Let stand 5 min, then slice.
