3 cups Balkan-style yogurt, 5.9% M.F.
3 tbsp granulated sugar
2 tsp grated lemon zest
1 tsp vanilla
125-g pkg meringue nests, or 16 meringues, each about 1 1/2 in. wide
1/3 cup sweetened desiccated coconut
1 pint fresh raspberries
1/3 cup pistachios, chopped (optional)
To thicken yogurt, line a sieve with cheesecloth or paper towels. Place over a bowl. Scrape in yogurt. Cover and refrigerate at least 3 hours or overnight. Turn thickened yogurt into a large bowl. Stir in sugar, lemon peel and vanilla. Coarsely crumble in meringues. Sprinkle with coconut. Stir to mix. Spoon into dessert bowls. Top with berries and pistachios.
