Mediterranean Burgers 2007

Ingredients

  • 2 tomatoes

  • 2 zucchini

  • 3 tbsp Italian salad dressing

  • 4 frozen or homemade burgers

  • 4 pitas or hamburger buns

  • 1/2 cup crumbled feta

  • 1/4 cup tzatziki

  • fresh basil

Instructions

  • Lightly oil grill and heat barbecue to medium. Slice tomatoes into thick rounds. Thickly slice zucchini lengthwise. Brush both with Italian salad dressing.

  • Place veggies and burgers on grill. Barbecue with lid closed until burgers are done as you like, 5 to 6 min per side. Turn veggies often until grill marks form, a total of 5 to 8 min. Remove from grill as they are done. Then place pitas ¿ we like pocketless Greek-style ones ¿ or buns on grill to warm, if you like.

  • Place burgers on pitas or in buns along with grilled tomatoes and zucchini. Sprinkle with feta and dollop with tzatziki. Garnish with basil, if you like.

Frozen burgers slash the prep time of this hearty meal in half. Dress them up with tzatziki, feta and thick slices of grilled tomato and zucchini.
