Hazelnut maple-rum apples

Hazelnut maple-rum apples

Ingredients

  • 1/2 cup hazelnuts, or almonds, toasted

  • 1/4 cup light brown sugar

  • 2 tbsp all-purpose flour

  • 2 tbsp butter

  • 1 tbsp rum, or brandy

  • 3 apples, sliced in half

  • 1/2 cup apple juice

  • 1/4 cup rum

  • 1/3 cup maple syrup

Instructions

  • Preheat oven to 375F (190C). Coarsely chop nuts. Stir sugar with flour and room-temperature butter. Mix in 1 tablespoon (15 mL) rum, then nuts. Core apples, creating a small cavity. Arrange apples, cut-side up, in a glass baking dish just large enough to hold them. Mound nut filling in cavities. Press down gently. Stir apple juice with 1/4 cup (50 mL) rum. Pour around apples. Drizzle apples with maple syrup. Bake in 375F (190C) oven, basting often with pan juices, until tender, about 45 minutes. Place on plates and drizzle with juices.
