3 tbsp olive oil
1 lemon, finely grated peel and juice
2 garlic cloves, minced
1/2 tsp dried oregano leaves
1/4 tsp cracked black pepper
4 halves skinless, boneless chicken breast
Whisk oil with peel, juice, garlic, oregano and pepper. Pour marinade over chicken and coat. Refrigerate, covered, preferably overnight.
Preheat barbecue. Remove chicken from marinade. Barbecue until chicken feels firm, from 6 to 8 minutes per side.
