Fast Thai salmon

Fast Thai salmon

Ingredients

  • 2 salmon steaks, or fillets, each about 180 to 250 g

  • 1 lime

  • 1 tbsp butter, at room temperature

  • 1 tbsp fish sauce

  • 1 tbsp hot chili-garlic sauce

Instructions

  • Preheat oven to 450F (230C). Place salmon in a foil-lined pie plate or baking dish just large enough to hold it. Cut lime in half. Squeeze juice from half a lime overtop. In a small bowl, mash butter with fish sauce and chili-garlic sauce until well mixed. It will not be smooth. Then smear overtop salmon.

  • Roast in centre of 450F (230C) oven until a knife tip inserted in centre of fish comes out warm, 15 to 18 minutes depending on thickness of fish. Squeeze juice from remaining lime half overtop. Terrific with green peas and noodles.

Tomorrow's lunch

Crumble leftover salmon into a bowl. Stir in coriander, mayonnaise and sliced green onion. Spread between slices of whole wheat bread or spoon into a pita. Or simply add to a salad.
