Fast saucy chicken

Ingredients

  • 796-mL can tomatoes

  • 1 tsp dried basil

  • 1 tsp oregano leaves

  • 1/2 tsp salt

  • 1 tsp granulated sugar

  • 4 frozen skinless, boneless chicken breasts

  • 2 zucchini

  • 1 cup couscous, or quick-cooking rice

Instructions

  • In a large wide saucepan, stir tomatoes, including juice, with seasonings and sugar. Submerge frozen chicken in liquid. Cover. Bring to a boil over high heat. Reduce heat to medium. Simmer, covered, turning chicken occasionally, 6 minutes. Slice zucchini into 1/2-inch (1-cm) rounds. Add to sauce. Cook, covered and stirring occasionally, until chicken is springy when pressed, 8 more minutes. Remove from heat. Stir in couscous. Cover. Let stand 5 minutes. Not all liquid will be absorbed. Add more salt, if needed. Fluff with a fork.
