Far Eastern kebabs

Ingredients

  • 8 skewers, each about 8-in. long

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tsp granulated sugar

  • 2 tbsp freshly grated ginger

  • 2 garlic cloves, crushed

  • 1/4 tsp hot pepper sauce

  • 4 skinless, boneless chicken breasts

Instructions

  • If using wooden skewers, soak them in water. Preheat barbecue and lightly oil grill. In a large bowl, stir soy sauce with sesame oil, sugar, ginger, garlic and hot pepper sauce. Cut chicken in 1/2-inch (1-cm) strips. Stir into soy sauce mixture until well coated. Thread chicken onto skewers.

  • Generously brush kebabs with baste. Barbecue with lid closed or covered with a foil tent. Baste often for the first 3 minutes. Turn often, without basting, until chicken feels springy, about 10 more minutes.

Sesame oil gives an intriguing Oriental taste to these glorious chicken kebabs. They are wonderful with grilled peppers.
