1/2 small red onion
2 garlic cloves
2 eggs
500 g ground lamb, or beef
2 tsp chopped fresh rosemary leaves, or 1 tsp dried rosemary
1/2 tsp salt
1/2 tsp freshly ground black pepper
Oil grill, then preheat barbecue to high. Finely chop onion half. Mince garlic. In a medium-size bowl, whisk eggs. Add meat. Sprinkle with onion, garlic, rosemary, salt and pepper. Using a fork or your hands, mix just until blended. Overworking ground meat toughens it. Divide mixture into 4 portions and shape into 1-inch- (2.5-cm-) thick burgers, about 3-1/2 inches (9 cm) wide. Place burgers on barbecue. Close lid and grill until burgers feel firm, from 5 to 6 minutes per side. Serve on buns or with salad.
