Chicken bruschetta burgers

Chicken bruschetta burgers

Ingredients

  • 500 g ground chicken, or beef

  • 1/4 cup store-bought bruschetta mix, such as Classico

  • 1/4 cup freshly grated parmesan, or asiago

  • 1 green onion, thinly sliced

  • pinch salt

  • pinch pepper

Instructions

  • Oil grill and heat barbecue to medium. Crumble chicken into a large bowl. Add bruschetta, cheese, onion, salt and pepper. Using your hands or a fork, gently mix together. Shape into 4 burgers, each about 1/2 inch (1 cm) thick.

  • Place burgers on grill. Barbecue, covered, until cooked through, 6 to 8 minutes per side. Place on plates and top with more bruschetta and grated cheese or serve on crusty slices of focaccia, if you wish.

Savour the last taste of barbecue season with this juicy burger. It's crowned with a flavour-bursting bruschetta mix that's scooped straight from the jar.

Add It

Mix in: * finely chopped pickled or fresh jalapeños * pinches of dried basil or oregano leaves * minced garlic * a sprinkling of hot red chili flakes Top with: * crumbled blue or goat cheese * grilled red onion slices * chopped fresh basil or coriander * roasted red pepper strips * snipped chives * avocado slices

Indoor Sizzle

No barbecue? No worries. Prepare burgers as above, then coat a large frying pan with oil. Set over medium heat. When hot, add burgers. Sauté, uncovered, 6 to 8 minutes per side. If they brown too quickly, reduce heat to medium-low.
