Char siu with grilled pork

Ingredients

  • 4 pork loin chops

  • freshly ground black pepper

  • 1/2 cup char siu sauce

  • 3/4 tsp minced chipotle in adobo sauce

  • 1 orange, thickly sliced

  • 4 green onions

Instructions

  • Oil grill and preheat barbecue to high. Lightly rub chops with vegetable oil. Sprinkle both sides with pepper. In a small bowl, stir char siu sauce with chipotle.

  • Place meat on grill and reduce heat to medium. Cover and grill pork a couple of min per side, then brush both sides with sauce. Continue turning and brushing chops with sauce until they give slightly when pressed, 4 to 6 more min per side.

  • After chops have cooked a few minutes, add orange slices and whole green onions to grill. Turn occasionally until lightly charred, removing each as it is done.

  • Place chops on plates. Spoon any remaining sauce overtop. Add orange slices. Thickly slice green onions, if you like, and scatter overtop. Add rice and a salad and dinner's done.

Char siu (pronounced char-SYOO) sauce mixed with chipotle forms a thick, smoky, slightly spicy glaze for chops. It's a match made in heaven for lovers of Chinese barbecue.

SHOPPING TIP

Char siu sauce is sold in the Asian section of most supermarkets.
