Minted Asparagus

Ingredients

  • 3 tp 4 bunches asparagus

  • 2 tbsp butter

  • 1 pinch of salt and pepper

  • 1/4 cup crumbled feta or parmesan

  • 2 tbsp coarsely chopped fresh mint

Instructions

  • Partially fill a large saucepan or pasta pot with water. Bring to a boil over high heat. Meanwhile, snap tough ends from asparagus and discard. Add asparagus to boiling water. Boil, uncovered, for 3 min. Immediately drain off water.

  • Return asparagus to burner. Reduce heat to medium. Add butter, salt and pepper and stir often until asparagus is tender-crisp, 1 to 3 min. Turn onto a platter. Sprinkle with Parmesan and mint.

The combo of mint and Parmesan adds just the right amount of flourish to mild asparagus.
