2 large baking potatoes
1 tbsp olive oil
salt
fresh-ground black pepper
1. Adjust oven rack to lowest level. Preheat oven to 450F (230C). Scrub potatoes. Peel only if you don't like skins.
Slice potatoes into 1/2-inch (1-cm) thick rounds, then into 1/2 inch (1-cm) thick strips. Pat dry and place in a bowl. Drizzle with oil. Sprinkle generously with salt and pepper. Stir until evenly coated.
Spread out on a baking sheet, preferably dark in color, to speed browning. Bake on bottom rack of oven, turning 2 or 3 times, until browned and tender, about 30 to 35 minutes.
