2 kg potatoes, about 8 potatoes
3 tbsp butter, at room temperature
1 cup light or regular sour cream
1 tsp salt
pinch black pepper
Peel potatoes and cut in half. Place in a large saucepan and cover with water. Cover saucepan and bring to a boil over high heat. Reduce heat to medium and boil gently, partially covered, until potatoes are very tender, about 20 to 30 minutes. Drain potatoes and mash, preferably with a potato masher. Beat in butter, 1 cup sour cream, 1 teaspoon salt and pepper. Taste and add additional sour cream and seasonings, if needed. Pile into a heated serving dish. If necessary, cover and keep warm in a 250 F (130 C) oven.
