125 g light or regular cream cheese, at room temperature
3 tbsp port, or dry sherry
1 tbsp finely chopped green onion
1/4 tsp caraway seeds
pinch of black pepper
2 cups finely grated old cheddar
Stir cream cheese with port. Then, stir in remaining ingredients. Serve with pumpernickel squares or crackers. Covered and refrigerated, spread will keep for 1 week.
